Cercando varianti, ho ultimamente rivalutato il tonno alletterato, molto diffuso nei nostri mari.
Si presta a molte preparazioni, sia crudo che cotto.

Per questa ricetta prendiamo un filetto del tonno alletterato, come al solito super super fresco (altrimenti meglio mangiare un piatto di pasta in bianco condita con un buon olio extravergine di oliva), togliamo la parte più scura dal sapore amaro e più aggressivo (buzzonaglia o bozzonaglia), che non gettiamo, la possiamo utilizzare per altre ricette e trattiamo il pesce come per le altre preparazioni di crudo, cioè abbattendolo a -20ºC per 24 ore.
Una volta decongelato il tonno, lo tagliamo a cubetti regolari e lo disponiamo sul piatto, condiamo con olio extravergine, e qualche goccia di salsa di soia.
