Ingredients:
Flour 0600 g
strong flour 400g
15 g sugar
extra virgin olive oil 20 g
20 g salt
25 g yeast
0.45 l water
Mix flour, crumbled yeast, oil, sugar and salt. Mix with water (the water temperature must be the sum of the temperature of the environment and of the flour, minus 60).
You can then prepare sandwiches with walnuts, olives, onion, sesame croissants etc.
Form of 30 g sandwiches.
Let rise in a warm place about 30 ° C for an hour and a half.


COOKING:
1 phase 170 ° C with 20% humidity for 4 minutes (in the home oven you can put a pot with a bit ‘of water, to create the necessary moisture);
2 phase 180 ° C for 3/5 minutes
