Raw Energy Balls

Le Energy Balls sono dolci sani e ricchi di sostanze energetiche, facili da fare e buoni da mangiare.
Gli ingredienti base sono datteri e frutta secca, ma si possono personalizzare in base ai propri gusti.
L’unica cosa necessaria per preparare l’energy balls è un buon frullatore e visto che sono “raw”, non vanno cotte, quindi non serve nemmeno il forno.
Le Energy balls non contengono farina, non contengono latticini e quindi possono mangiarle anche celiaci e intolleranti al lattosio.
Una volta preparate, si possono conservare per diversi giorni in frigorifero chiuse in contenitori ermetici.

Ingredienti:

 

200 g datteri sgusciati

 

50 g mandorle sgusciate

 

50 g noci

 

50 g nocciole

 

30 g bacche di goji

 

20 g semi di lino, olio di cocco (facoltativo)cocco grattugiato cacao amaro. Mettere datteri, noci, nocciole, mandorle e semi di lino in un frullatore potente.Frullare fino ad ottenere un impasto uniforme. Aggiungere le bacche di goji, i semi di lino e lavorare ancora qualche secondo.Aggiungere l’olio di cocco per ammorbidire leggermente l’impasto.Formare delle palline poco più grandi di una noce e rotolarle nel cocco grattugiato o nel cacao amaro.Questa è una ricetta base per fare le energy balls. Possono essere personalizzate variando gli ingredienti a piacimento.Conservare le energy balls in frigorifero, così le avrete a disposizione tutte le volte che avete bisogno di una botta di sana energia.

Ingredients for 4 people:

260 g almond flour
4 large eggs
120 g almond milk
600 g extra virgin olive oil or coconut oil
15 g raw honey (2 tablespoons) or maple syrup
8 g bicarbonate
cinnamon powder
sea salt

Work all the ingredients in a bowl with a whisk. The batter should be neither too thick nor too liquid.

Heat iron or a nonstick pan, grease with coconut oil and with a ladle, pour the amount required to make the first pancake. The first pancake is also a test to see if the dough is the right consistency. Once cooked on one side, with the help of a spatula, turn and finish cooking also from this side..

Continue with all the batter.

Serve pancakes hot accompanied with strawberries, blueberries, raspberries, maple syrup, nuts, yogurt sauce with wild berries, peanut butter, goji berries ….

Ingredients for 4 people

2 ripe avocados

50 g agave syrup

30 g cocoa powder

2 g ground cinnamon

Wash avocados. With a sharp knife, cut the avocados kernel, then rotate the blade around the kernel to be able to divide in half.

Thanks to cooperation with NaturaNuova we have the opportunity to try many of their products and having fun to prepare new recipes. Today we start with tofu.

Tofu-Semi-Cannella

Tofu, seeds, olives, radishes and Cinnamon

Ingredients for 4 people:

360 g Tofu  NaturaNuova

black and golden flaxseed QB

sesame seeds QB

sunflower seeds QB

100 g of field radicchio

60 g olives

4 radishes

10 g ground cinnamon

extra virgin olive oil

salt

Cut the tofu into slices 1 cm thick.

Passarne on some sesame seeds, other than of flax and other on sunflower seeds, pressing lightly to make sure that they remain stuck to tofu.

Wash the radicchio, drain and dry, and then finely cut.

Wash the radishes and cut them into thin slices.

Pit the olives and cut them into small pieces.

Heat a non-stick pan; add a little extra virgin olive oil and lay the slices of tofu. Leave on low heat until brown the seeds are lightly toasted, then turn gently all slices and finish cooking.

Arrange the radicchio in the dishes. Arrange the tofu slices. Distribute in any order the radish slices and olives.

Season with an extra virgin olive oil, salt and complete with a sprinkling of cinnamon powder.
